Cauliflower Crust PIZZA!

This is probably the BEST RECIPE I have found yet, that satisfies my bread cravings with NO BREAD NECESSARY!

This Pizza is completley gluten free & delicious! 

(The Crust Pre-Toppings)


Ingredients:

1 cup cooked, riced cauliflower (simply shred in a cheese grater )
1 egg
1 cup mozzarella cheese
Pizza herbs: 1/2 tsp fennel, 1 tsp oregano, 2 tsp parsley
(The last three ingredients can be changed for YOUR favorite pizza-type herbs)

If you don't know how to make Cauli-rice, here is a helpful tutorial!

Directions:

Preheat oven to 450ºF/232ºC. 
Spray a cookie sheet with non-stick spray. 
In a medium bowl, combine cauliflower, egg and mozzarella! Press evenly on the pan. 
Sprinkle evenly with pizza herbs.

Bake for 12-15 minutes (15-20 minutes if you double the recipe).


 Remove the pan from the oven:
To the crust, add sauce, then toppings and cheese! 
Place under a grill/broiler at high heat just until cheese is melted!



Serve to be eaten with a fork & knife!

Rest Day - THANK GOODNESS


It feels SO GOOD to be SORE!

I love that I have been able to get back in the swing of things this week.

Today's Food:

Breakfast:

For breakfast I met up with my grandma at her nursing/retirement home, which is really like an AMAZING restaurant & hotel. 

I had a delicious bowl of mixed fruit, a little ham omlette, breakfast potatos & bacon!

Notice how perfect the portion control is there?!!!



Lunch: Chicken & green Beans from Last night!


Dinner:
Cauliflower crust Pizza! 

Completely Gluten Free!!!

I had found this recipe on the internet, gave it to jeff 
(explaining I had been CRAVING some good pizza)
& this is what he made me!

I will be sharing the recipe tomorrow, because it was DELICIOUS!!!!!!

With the amount of cheese & toppings we put on, we def had to eat ours with a fork!


Also, Today I toured my new house, as I am MOVING on Feb 1st!

It is an understatement to say I should have started packing a WEEK ago. 

I have lived my WHOLE LIFE in my current house.....

That means I've accumulated ALLOT of stuff.

Workout & Food! Jan 9th



Today went by SO fast... It felt like Friday!

Getting back to CrossFit this week has been great, but I am ALREADY so sore. 

THANK GOODNESS tomorrow is a rest day!

Today's Workout:


This workout KILLED!

Each round had a 10 minute time cap. 

If you finished the rounds you kept track of your time & added all times together for final score!

If you didn't finished all 3 rounds of each set you took a ten minute score. 

My score was 19 minutes 36 seconds.... Not my best!

I even ripped my hand doing pull ups :,(



On a Happier note, I ate AWESOME today!



Breakfast:
 2 eggs scrambled w/ cheese

Snack:
 Banana



Then I made a salad with lettuce from my families GARDEN!!!!

Lunch:


Salad: Fresh Picked Lettuce, 3 Hard Boiled Eggs, Avocado & Turkey


Dinner:


Jeff Made me my FAVORITE green beans... 

Cooked with Bacon, Carrots & a sprinkling of fancy cheese!

He also made homemade barbecue sauce for the drumsticks!


We are a match made in heaven... I buy the groceries with coupons, He COOKS and  I help with the dishes!

Squat & Clean 95 lb! Wod & Food Entry

I am MORE than satisfied with my day of clean eating & working out!

They are a great inspiration to crosfitters & weightlifters, and offer daily motivation, tips & more!

Lift Big Eat Big is a great motto, I think I'll start applying it to my everyday life!


Workout:



I LOVED The squats & jerks!

I really pushed myself and was able to squat/jerk 95lbs!

The second portion of the workout was scored by total calories/wall ball shots & my score was 191. 

I felt pretty good about my workout!

Food (Lift Big, Eat Big):
For breakfast I had a 2 egg omlette with guacamole!


Lunch: I had a chicken salad & a cheese stick!


Snack: Giant piece of ham!

Dinner: Chicken & Spaghetti Squash!


Overall a pretty successful day in terms of working out and eating!

Yesterday's Wod & Food Entry!


Wow, This is my first official food & wod post for the year 2013! 

This is going to be my SEVENTH MONTH Blogging!

And in Feb I will be doing the SPARTAN RACE!

Needless to say, I am very excited for the year 2013 :)

I'm keeping up with my resolution of no coffee, sitting here drinking and unsweetened cup of black tea with a splash of milk:

It tastes a LOT better than I thought it would....

& is a LOT cleaner than the Coffee I was drinking before! No more coffee creamer! No more bad Sweetners!


Yesterday's Wod:

Now, I was unable to do the rx 55lb snatch because I took so many days off in december :(

But I did my next best, which was 45lbs and I finished in 9:36!


Not too bad I think, for having taken so many days off!

Yesterday's Food:


Breakfast:
 Green Tea, 2 scrambled eggs & Avacado

Lunch:
Chicken Salad, Herbal Tea

Snack:

Almonds

Snack #2
 A Yummy Piece of Ham!

Dinner:

For dinner I went out with friends to a dinner theater

 ( it's one of our FAVORITE things to do)

I ordered a Hamburger and took off the giant top bun, and my boyfriend helped me eat my french fries!


Dessert:
Boyfriend and I split a piece of cheese cake, & I tried to stay away from the crust!


Hoping to get a FULL clean day in with no splurges!

Back to It!


Tomorrow is the start to my regular schedule!

I couldn't be MORE happy :)

I tried to eat well today, though I was met with a few setbacks at dinner tonight!

For breakfast I had eggs & 1/3 a avocado


For lunch....

I think I missed lunch?

What can I say, I slept in until TEN so I got a REALLY late start to my day!


Then for dinner, I went to my boyfriends house without asking if they ate yet/what they were having...

Oops! Big mistake, they were having PIZZA!

Now I will NOT forget to ask about that BEFORE going over!

Tomorrow I will be getting back into CrossFit for what seems like the first time in a LONG time!

I believe it's only been a little over a week but I am nervous anyways!

I will let you know how it goes!

I'm BACK From my Trips!

I"M BACK!!!

I spent 3 days in California, & 4 Days in Nevada! 

I'm Oficially run down, tired & sick!


Lucky for me, My work begins again on Monday so I can bacck to my schedule and kick some butt!




Also, I'm ready to WEIGH IN and Face the fat  I mean facts

In Disneyland.... I ate Churros & Hamburgers & all delicious things


In Nevada I was staying with my boyfriends parents & grandparents at his grandparents house, visiting because his grandpa has cancer


I ate ALLOT healthier on this trip but still splurged a little in the ice cream department ;)



I Got REALLY sick the first day at Jeff's grandparents house, apparently the lack of sleep and cold weather at disneyland caught up with me!'


I'm almost all better, besides a gnarly cough!

I traded working out today for a day of rest. 

Meanwhile, my boyfriend competed in a crossfit competition and did very well!



Did anyone make New Years Resolutions?

My Top new years resolution is to QUIT coffee in 2013!

So Far, So Good!!!!


I'm ready to get back on track!
