Paleo Crepe & Tortilla Recipe!



This was an AMAZING recipe for anyone who wants to try the Paleo diet!!

If you have ever tried Paleo pancakes before, they are a little dense and chewy, but THESE are light and crispy and delicious!!!

I ALSO use this recipe (as it is very plain) to make tortillas!


I was amazed that they held together so well, and were so easy to make!!!

The Best Part about these is that they are low carb, and low calorie!

Per crepe/tortilla:
74 Calories 
 2 carbs
5 fats
4 proteins



Directions:
1. Whisk Together 6 eggs, 1 Cup almond milk & 2  tsps melted coconut oil!
2. Sift in 3 tbs. coconut flour and whisk! 
3. Let sit for 10 minutes, then whisk again!
4. Heat a medium/large pan and grease with coconut oil or butter

THIS is the fun part!
1. Pour about a 1/4 - 1/3 cup of mixture into the pan, and quickly spread the mixture around the pan evenly!
2. Flip with the edges start turning up - I flip mine with my hands!

THEN ENJOY!






I have found several different ways to enjoy these! 

The best part is, so far they have stored great!

Sunday evening I made about 5 medium sized crepes/tortillas (halved the recipe)

and I have been able to store them in a Ziplock and keep reusing them!!

I'M BACK! Paleo Challenge Update

Where have I been??!!

Well when technology hates you, this happens:


Tried turning on my computer everyday only to see this screen... good thing I had my DAD come help me tonight. 

It's a sad day when you can't fix your own computer!!!

Anyways...

I LOST TWO POUNDS!!!!

I'm SO HAPPY this Paleo Cleanse is going well!

It has been exactly 1 week & a day, I've lost two pounds and I feel great!!!

Starting Weight: 157 lbs
Current Weight: 138 lbs
Total Lost: 19 lbs

ALMOST TO TWENTY LBS LOST! YAY!
This is a big accomplishment for me! It has taken me over 8 Months to get here!




Here are some pictures of the food I have eaten the past couple days while my computer was down:
















I have been able to stay pretty strict to Paleo, besides a few times I had to eat out!!!

Also, it turns out that when you are eating paleo, making salad dressing out of hummus and salsa is amazing tasting. 

I will post pictures of how I am doing so far this week!

Also I am planning a cali trip in June and I am HOPING to weigh in the 120's by then!!!!! 

That is my new goal!

Here's to being MOTIVATED to reach our goals and look better than ever!

Rest Day - THANK GOODNESS


It feels SO GOOD to be SORE!

I love that I have been able to get back in the swing of things this week.

Today's Food:

Breakfast:

For breakfast I met up with my grandma at her nursing/retirement home, which is really like an AMAZING restaurant & hotel. 

I had a delicious bowl of mixed fruit, a little ham omlette, breakfast potatos & bacon!

Notice how perfect the portion control is there?!!!



Lunch: Chicken & green Beans from Last night!


Dinner:
Cauliflower crust Pizza! 

Completely Gluten Free!!!

I had found this recipe on the internet, gave it to jeff 
(explaining I had been CRAVING some good pizza)
& this is what he made me!

I will be sharing the recipe tomorrow, because it was DELICIOUS!!!!!!

***The original pin said you could still pick it up in your hands..... 

With the amount of cheese & toppings we put on, we def had to eat ours with a fork!


Also, Today I toured my new house, as I am MOVING on Feb 1st!

It's still in the works, but apparently will be ready for move in on Feb 1st... YIKES!

It is an understatement to say I should have started packing a WEEK ago. 

I have lived my WHOLE LIFE in my current house.....

That means I've accumulated ALLOT of stuff. 

Yay.

NEW Recipe: Easy Paleo Pancakes!!


Yes, it's the weekend!

What does this means??

Pancakes!!!!!!!


This recipe was SO EASY & TASTY!!!!

Definitely one of the better ones I have tried!!! 




Usually Paleo recipes drive me crazy - with secret little ingredients that would make me have to run to whole foods.

The ingredients were all things I already had in the house! Yay for easy & available!





Easiest Recipe Ever:

* Mix together dry ingredients
*Add Liquid Ingredients
*heat pan
**ENJOY**


Don't you love finding a simple and yummy recipe?

I was also very pleased that these were MUCH faster than the pumpkin paleo pancakes I previously made!
