Job Interviews, CrossFit & Staying Motivated!


I started out my day by going to a Job Interview!!! I was going for the business profesh look hahah!

What do you think I should do this Summer?

Work 2 jobs and save money for next year, or enjoy myself while it lasts and work 1 job before I start my junior year of College?

(Personally, I'm leaning towards the 2nd option)



 Breakfast: 2 fried eggs served omelette style & an avocado

 Lunch: Chicken & Hummus Salad

Snack: Strawberries 

Dinner: Famous Dave's BBQ Chicken, Ribs & Green Beans AGAIN!
The boyfriend and I have some FREE coupons we need to finish off before they expire in the end of May!!
BBQ Overload this month!

I LOVED This workout!!! I was able to hit 95lbs on my push press and I did not even catch my time at the end of the dog sleds because I pretty much passed out on the floor, but they were HARD

Just me, dead on the floor after pushing the sled!!!

Tomorrow I have a Training ALL DAY (8 am to 5 pm) for my new/summer job so I packed up a days worth of snacks/meals:


I LOVE feeling prepared and motivated!!!!!! Ever since I have started instagram I have been SUPER motivated to eat as clean as possible and get back into the whole weight loss thing!

What do you do to stay motivated?

WHY You Should Make Your Own Trail Mix!




Trail Mix seems like a healthy and innocent snack...

BUT

Many mixes throw in Chocolate chips/ M&M's


Loads of salt

&

Added sugars.



This could easily make that "healthy" little handful of trail mix

 contain 300-plus calories!!!!




Making your own trail mix can offer a high protein, high energy

 snack - without the calorie overload!



All you need are:

 2-3 Types Unsalted Nuts
You can find these at any Fry's in a dispenser area

1-2 Types of dried fruit:
Also found at Fry's: organic & unsweetened or naturally sweetened


I also like to add Dark Chocolate covered fruit pieces from Next 

Organics. 


I've only ever found them at Albertsons, but they are all organic 
and their products contain:

 NO Chemical residues, Micro-biological pathogens & GMO ingredients.

I usually go to Fry's to make my trail mix because most Fry's have 

an aisle where you can self serve yourself Nuts & dried fruit pieces

 & pay by weight for fairly cheap!


I like to get pecans, almonds, banana chips, raisins, & then add in a 

package of my dark chocolate fruit from Organics!!


One 1/4 cup serving of my trail mix has about:

109 Calories
7.5 Fats
12 Carbs
1 Fiber
3 Proteins


I typically eat a serving every morning, 2 hours after juicing to 

sustain me until lunch!!!


Today I am snacking on it while I study for my finals this week...

Paleo Crepe & Tortilla Recipe!



This was an AMAZING recipe for anyone who wants to try the Paleo diet!!

If you have ever tried Paleo pancakes before, they are a little dense and chewy, but THESE are light and crispy and delicious!!!

I ALSO use this recipe (as it is very plain) to make tortillas!


I was amazed that they held together so well, and were so easy to make!!!

The Best Part about these is that they are low carb, and low calorie!

Per crepe/tortilla:
74 Calories 
 2 carbs
5 fats
4 proteins



Directions:
1. Whisk Together 6 eggs, 1 Cup almond milk & 2  tsps melted coconut oil!
2. Sift in 3 tbs. coconut flour and whisk! 
3. Let sit for 10 minutes, then whisk again!
4. Heat a medium/large pan and grease with coconut oil or butter

THIS is the fun part!
1. Pour about a 1/4 - 1/3 cup of mixture into the pan, and quickly spread the mixture around the pan evenly!
2. Flip with the edges start turning up - I flip mine with my hands!

THEN ENJOY!






I have found several different ways to enjoy these! 

The best part is, so far they have stored great!

Sunday evening I made about 5 medium sized crepes/tortillas (halved the recipe)

and I have been able to store them in a Ziplock and keep reusing them!!

Pranks, Food and TGIF!


FINALLY! End of week one!!!!!

Sorry for the absence of blogging!

I usually either blog at night, OR most of the time, before I go to work in the early afternoon. 

This week I went straight from School, to Work, to the Gym, then to eat Dinner..

Then it would be like 9:30 and I would watch tv and pass out :)

ANYWAYS!

I got PRANKED this week.. BAD!

Have you ever tried to order Paleo Bread or Gluten Free bread before?



For some reason I haven't been able to find it at the local whole foods (I'm blind?)

So in a moment of poor judgement, I ordered it online instead!

WELL, the other day when I came home late at night and exhausted, my family told me my bread had come!


This is what I got:




I was so tired (and upset, we'll discuss later) that I didn't question that this wasn't my bread, and thought I had been SCAMMED!

My family of course thought it was hilarious, and made me try it (it was disgusting)....

Obviously I threw a giant fit and was planning on writing a letter of complaint the next day when my family informed me that it was a prank... and if I wasn't so tired I wouldn't have fallen for it!

HAHAH

So at least my bread is still coming...

Recipe: Paleo Chocolate Cookies!!!



I Love the Paleo Life Style, but ALLOT of times I MISS baked goods!!

My boyfriend and I came up with this recipe (modified it from another recipe) and were SO excited to try it!

    Ingredients:

Pure Vanilla Extract

1/2 tsp

Coconut Oil, Organic

1/2 cup

Eggs, Pastured

4 whole

Coconut Flour

1 cup, sifted
 Semisweet Chocolate Chips

3/4 cup

Salt

1/4 tsp

 Raw Honey

1/2 cup

 Cocoa Powder, Organic

1/4 cup, unsweetened

Sliced Almonds

       1/2 cup, chopped



At first I was like... HEY, there is no baking soda or powder in this recipe??!!! How will this ever work!!!

But it turns out, we didn't need it ;)



Directions:
Preheat oven to 325.
  1. Melt coconut oil and honey on low head in a saucepan.
  2. In a medium size mixing bowl blend eggs, vanilla extract, salt, honey, and coconut oil with an electric hand mixer.
  3. Add in unsweetened cocoa powder, and blend again.
  4. Sift in the coconut flour, and continue to blend with the hand mixer until all the ingredients are mixed.
  5. Pour in chocolate chunks, and almonds and stir with a spatula until evenly distributed.
  6. On a parchment paper lined cookie sheet, scoop out dough into small balls ( 1-2 tablespoons is about right).
  7. Using a cup, flatten each cookie into a "cookie shape" **This is important, cookies do NOT flatten while baking!
  8. Bake at 325 for about 15 minutes, or until the cookies start to brown a bit on the top



They turned out Soft & Chewy and INCREDIBLY Delicious!!!

We didn't have dark chocolate chips but we DID have an 88% dark chocolate bar, which we chopped into huge chocolate chunks..

YUM!
