Photo Diet 8/8/12

I had an AWESOME first day back to work!!

I was nervous because I was going to a different school site than I have for the past two years....

But I already LOVE my kids!

I also ate very well today and am proud of myself :)

Here is what I ate today:

Breakfast:
2 Scrambled eggs, turkey bacon & blueberries

Snack:
 Apple

Lunch:
Piece of chicken, 1/2 sweet potato, veggies

Snacks at work (12:45-6:00 p.m):

Dinner:
Chicken Drumsticks, fresh green beans & baked sweet potato frys :)

I also wanted to share some inspiration with you.

I recently attended a talk given by Dr. Gale Gorke (find out more about her HERE)

She is a speaker that inspires people who work with kids in any aspect (teachers, after school care, ect.)

In the MOST fun & INSPIRING seminar I have EVER been to, I took this note, and I have re-read it several times since.

In the middle of one of her topics, Gale talked about what happens when we fail.

What happens when you have a GREAT idea in your head, and your SO excited, you try it...

and it goes NOTHING the way you planned.

A lot of people get frustrated and give up.

but she left us with this:

Failure Always leads to Success...

Unless you quit.

After you try something for the first time and it doesn't go your way,

don't give up.

This quote stuck with me so much, I have it on my blackboard for the week:

NEVER quit.

W.O.D 8/8/12

I am VERY excited to meet my new students today!!

I am aspiring teacher, and obviously I LOVE kids, which is why I LOVE my job.

I have spent all morning preparing my Binder of Games and Art projects for the kids at my new site.

Anyways, I also LOVE crossfit bodyweight workouts because I can do them with no equipment and they really dont take long at all!

Perfect for days like today where I only have 1 hr and 30 mins before work and I'm still in my pj's...

Here is my W.O.D
(I added the jumprope because I did not have a pull up bar)

Happy Wednesday!

My 21st Birthday

I turned 21 this weekend.

Things would've been REAL crazy this weekend...except I don't drink...

(no i'm not mormon, just a personal choice)

So I spent my weekend in DISNEYLAND with my family & boyfriend!!!

I tried to document my food on the trip, I ate GOOD until Sunday...I think knowing it was my last day made me eat a little crazy...

Here are some of the things I chowed in Disneyland...

Yeah... that ice cream sunday? So NOT Paleo.

But I ENJOYED myself.... you only turn 21 once right????

Today I WOULD'VE documented everything I ate, but I was very VERY tired and thrown off my schedule/ had an ALL day work meeting....

Plus I was not excactly Paleo today.

Remember when I said it was easy and I did not even crave sugar or anything?

Yeah I guess when you go on a trip and think that you can eat CRAP and come back home to your routine, it doesn't work.

So tonight I went Grocery Shopping (which I love) to get me on track for the week, because I had NO food...

Here is the picture of my cart to make up for the lack of photo diet:

Also this week I am going to try and NOT eat any type of dessert/sweets so I can GET RID of my sugar/sweets cravings

Now here are some fun pics of my trip/birthday since I only talked about food:

My Sister, me, Brother + his g.f. & my Parents

My boyfriends arm covering my face

 Me and Mickey Mouse :)

My boyfriend with some bushes he thought was awesome

My Boyfriend and the Cars Land Fire Truck... He is an aspiring Fire Fighter :)
& he has an interview on Wednesday! Good Luck Jeff!

 Chill Mini Mouse

I hope everyone had a great weekend :)

My Cooking Skills/ a not so Paleo Day?

I often write about how my Boyfriend cooks for me.

If you have eyes, you can see the food looks DELICIOUS

At this moment, you can look through my posts and see a pattern....

The only thing I know how to cook well is breakfast food.

Everything else to me is FOREIGN

Unlike my boyfriend, who has a AMAZING stay at home mom who cooks/bakes DELICIOUS things and taught him how to cook/ bake.......

I grew up with a working mom (teacher).. who made the same 5 meals every week and Pizza on Friday's.

Even now that my mom is retired, she keeps herself VERY busy and STILL makes the same 5 meals every week.

I'm not complaining, I just WISH I knew how to cook!

My house also has a LACK of fresh/vital ingredients for most recipes.

Being the struggling college student that I am, I do my best to buy my own HEALHTY groceries, but even then I cannot afford everything I need to be able to create the genius healthy-food masterpieces my boyfriend  creates at his house.

The past two years that I've been dating my boyfriend I've learned more about cooking than I have ever known.. and I'm still not good.

ANYWAYS

This is leading up to something.

Today, I went to work ALL day.

I packed my lunch the night before.

Like usual, my house had NOTHING healthy to cook except canned tuna in the pantry.

So I went for the tuna.

I opened the can, and we had nothing to put in it...

No miracle whip, no avacado (found that on pinterest once) no NOTHING....

Except Mustard.

At work today, I pulled out my weird colored mustard tuna and the kids confirmed it...

It looked and smelled disgusting.

and tasted bad too.

Since I was working the double shift, and since it's the end of the summer the kids got PIZZA in the afternoon.

I ate a piece.

I tried really hard to convince myself (while chewing on some blueberries) that I was completely satisfied with the food I had brought.

But I wasn't

In the end, the smell of melted cheese on bread with hot pepperoni's won, and it was magnificent.

I really am not ashamed about it, just PREPARED for what I need to grocery shop for next week, so that the next time I compare my lunch with a piece of pizza, I won't have to think twice about which I want to eat.

Eating healthy shouldn't feel like I'm on fear factor (the mustard tuna)..

With all that being said about my "Paleo Slip Up"

Here is what I ate today:

Breakfast:
 Scrambled eggs, Paleo Coffee

Lunch: (unpictured)
Nasty Tuna
Blueberries
Mixed Nuts

Snack:
Greek Yogurt

Slip Up:
Pizza

Dinner:
That's my boyfriends hand, modeling the delicious salad he made for me as a surprise :)

Chicken/mago salsa salad :)

SO YUMMY

Tomorrow I will be packing for a weekend in DISNEYLAND to celebrate my 21st birthday.

xoxo
